Our Tradition What is Kakinoha-Sushi?

Kakinoha-Sushi is a traditional local specialty from the Yoshino region of Nara, Japan.
By wrapping the sushi in persimmon leaves and pressing it with a weight, the flavors gently meld together and the sushi becomes more suitable for keeping. Another distinctive feature is the subtle, refreshing aroma of the persimmon leaves.
In the Yoshino area, kakinoha-Sushi has traditionally been enjoyed as a special dish on festival days. While mackerel was originally used, today other ingredients, such as salmon, are also commonly prepared. -

A Heritage of Over 100 Years
The brand name “Izasa” was bestowed by a senior Buddhist priest of Tōdai-ji Temple, home to the famous Great Buddha of Nara.
In addition to operating stores within Nara Prefecture and the Tokyo metropolitan area, Izasa Nakatanihonpo’s kakinoha-Sushi is also sold at JR railway stations and other transportation hubs.
