Lightly vinegared horse mackerel is placed on sushi rice prepared with our signature blended vinegar, then carefully wrapped one by one in persimmon leaves and gently pressed.

Horse mackerel offers rich umami with a clean finish, pairing exceptionally well with vinegared rice. As it rests wrapped in the leaf, the flavors of the fish and rice gradually harmonize, resulting in a refreshing and balanced taste.
Please remove the leaf before eating and enjoy as is.
