Mackerel Persimmon Leaf Sushi is the most classic variety of Nara’s traditional kakinoha-zushi.
Vinegared mackerel is placed on sushi rice seasoned with our signature blended vinegar, then carefully wrapped one by one in persimmon leaves and gently pressed.
Born from the wisdom of people living in landlocked Nara, salted mackerel was once transported from the Kumano coast and preserved in this unique way. As the sushi rests wrapped in the leaf, the flavors of the mackerel and vinegared rice gradually meld together, creating a deeper, well-balanced taste.
Please remove the leaf before eating and enjoy as is.
